Tomato Garlic Pasta



I was craving some pasta the other night, so I rummaged through my fridge and cupboards, and whipped up my go to pasta recipe.


Ingredients:

- 1 T olive oil
- 2 t butter
- 3 medium tomatoes, diced
- 3 garlic cloves, minced
- 1/4 t crushed  chili flakes
- a pinch or two each of dried tarragon, thyme, and basil
- salt & pepper to taste
- 1/2 lb of angel hair pasta
- grated parmesan cheese


Method:

1. Boil some water for the pasta.
2. Over medium heat, add the oil, butter, herbs, and chili flakes. 
3. When you can smell the herbs, add the tomatoes and garlic. 
5. Once the mixture starts to bubble a bit, lower the temperature to medium/low.
6. When the water is ready, add about a teaspoon of oil, and a big pinch of salt to the water before adding the pasta. 
7. As the pasta cooks, stir the sauce, and season with salt and pepper to taste.
8. Drain the pasta when it's al dente, and add to the sauce. 
9. Turn off the heat, and toss the pasta until it's evenly coated.
10. Serve with some grated parmesan on top.
